Whether at remote island luxury hotels or well known chains, high occupancy rates and customer demands for fresh produce mean that food waste is not a new concept. But it doesn’t have to be ‘waste’ it can be used as a resource.
For sites which have landscaping or gardens, on-site composting is a great way to recycle food waste at source and produce a nutrient rich compost for use within the gardens or cultivation plots. However, for those areas which are more compact, food waste drying is a popular option, as it can reduce its volume and weight by up to 90%.
